Beef bourguigon with creamed potatoes

Paupiettes of sole and langoustine mousseline, buttered spinach, trompette de mort, pomme vapeur and a dill beurre blanc

Jerusalem artichoke, sweet onion and reblochon pithivier, carrot and swede puree, gratin dauhpinos, truffled hollandaise
